Granite is igneous rock — cooled magma — and the crystals, colour and movement vary block to block and even slab to slab within a block. That is the appeal and the catch. Granite takes heat better than any engineered surface — a hot pan straight off the burner will not scorch it — and it resists scratching from normal kitchen use. It does need sealing, at fabrication and periodically afterwards, and lighter more porous colours need it more often than dense dark ones. That is the whole maintenance story.
Southern California sun is hard on engineered quartz — sustained UV can discolour the resin binder, which is why most quartz warranties exclude outdoor use. Granite does not care. For a built-in BBQ island or an outdoor bar, granite or porcelain is the right call.
